Light Fruit Cake
225g (8 oz) self-raising flour
10 ml (2 tsp) mixed spice
5 ml (1 tsp) baking powder
100g (4 oz) soft margarine
100g (4 oz) dark brown soft sugar
225 g (8 oz) mixed dried fruit
2 eggs
30 ml (2 tbsp) milk
Grease and line an 18-cm (7-inch) round cake tin.
Sift together the flour, spice and baking powder into a large bowl.
Add the remaining ingredients, mix well and beat for 2-3 minutes until well blended.
Turn the mixture into the prepared tin and bake in the oven at 170°C (325°F) for 1 ¾ hours.
Turn out to cool on a wire rack.
Makes one 18-cm (7-inch) cake.
